Chili Con-troversy: Former guest and our favorite Jedi, Jeff K. from
on Substack, a Michigan native transplanted to Texas, questions Gary’s chili recipe:Jeff writes: “Congrats to Gary but not sure about a chili cookoff with beans. That would never fly in Texas...”
When questioned about what’s in Texas chili,
responds:Meat, chilies, and spices. My basic recipe is meat (usually a beef/pork mix) onions, garlic, chili powder (I haven’t gotten into using dried chiles, yet), spices, fire roasted tomato sauce, and shiner bock.
Chile con carne as we know it generally started around 1860 with the San Antonio Chili Queens. Women who would sell bowls of chili out on the plazas in SA to help make money for their families. I had always assumed that beans were part of chili then, because they’d be a cheap way to stretch a pot of chili since they’re filling. Interestingly the recipes from that time that I could find don’t have beans.
We take our chili seriously in Texas, it’s the state dish. One of these years I’m going make it to the Tolbert Chili Cookoff in Terlingua.

10th Annual Chris Lewis Memorial Golf Tournament: It was announced this week that the annual golf tournament and scholarship fundraiser for the guys’ former classmate will be Saturday, August 2nd. Brian and Gary discuss what celebrity they would like to join them for the day on the course.
